As an industrial research chemist who became a high school chemistry and physics teacher, I found that high school curricula are not as friendly to "applied" science as it is to "theory." The plan is to make sure the students get a thorough grounding in theory before moving on to college or industry. Of course, students get a lot more excited about applied science: they can see it's all actually good for something.
